That a bit of a broad question. You can set up tunnels with the ip
command. Also, at the moment, OpenVPN doesn't support IPv6 in routing
mode. If you use a VPN, you should use IPSec, which does support it.
You'll likely also need some means of assigning addresses, which is
usually done with radvd. I don't know your level of IPv6 expertise, but
I find "IPv6 Essentials" from O'Reilly to be an excellent reference:

BTW, I have a /56 subnet, which is over a trillion times the entire IPv4
address space. I've already used about a dozen of them. ;-)
