Take a look at <http://www.rockbox.org/>; they have built what seems
to be a "Linux for audio devices" distribution that runs on a number
of music players (Archos, Apple, iRiver, SanDisk, Cowon, Toshiba), and
which tends to have a lot more capabilities than any vendor builds
into their software.
