It's easier to lock away in a safety deposit box.  It also makes it
easier to use the files on more than one computer, when a network isn't
available.

Incidentally, there was an interesting article on "encryptfs" in this
month's Linux Journal.  One point that stood out, was that you can mount
the encrypted file system over the same unencrypted directory.  This
way, when you enable the encryption, you see the "clear text" files and
when not, you get the encrpted files.  This makes it easy to do backups,
without having access to the key.
