Before I start NFS RTFM, will NFS handle this problem?

Yes NFS will do this. Add the following line in /etc/fstab . You may 
want to change the options.

10.10.10.10:/xyz   /localfolder                nfs     timeo=14,intr   0 0

where 10.10.10.10 is the NFS server IP and xyz is the NFS export. 
localfolder is the path to localfolder.

Then give command :  mount -a
