Here's my $0.02
Look at Communigate Pro. It's not open source - I know. 
However the thing that -is- interesting is that they emulate
Exchange services - including shared contacts, tasks, etc.

They have support for Public/Private folders and user permissions.
Also Stalker (the company that makes it)  recommends it be run on 
a Linux server for best performance.

I know it uses sendmail for a chunk of it's processing.

The reason to look at it if making your own Exchange service for 
the open source world is their use of IMAP tricks to pull the 
whole thing off, and the little plugin for Outlook they wrote.

That's a starting point. 

Now for a really special treat - I'd really like to see a similar
plugin for Evolution.
