True, although some do offer imap accounts now.

No, Maildir does, IMAP has nothing to do with how mail is stored.
UW-IMAP works with both mbox and Maildir (although its Maildir support
is terrible and broken.)  Courier works only with Maildir, although many
mail server's can deal with that.  I am sure there are other mbox
capable imap servers too.
