How do I block Facebook without breaking web surfing?

However, if you've never signed into Facebook, I doubt they could tell
who *you* actually are. They would just know "some unknown person
using this device is/has [...]".

Regardless, it sounds like you could get away with just blocking
cookies for the domains setting and reading these cookies, as opposed
to blocking all traffic for them. Blocking just the cookies may be
easier and may help with your problem of pages not loading.
