SMTP Question

Here is the question:
I want to set up some laptops to send email (Thunderbird) from wherever
they are. Can I set up Postfix to do this for me with SASL+TLS so I don't
end up on a blacklist for being a spam relay?
If this is the right approach, can someone point me at a set of
instructions up found useful (Debian, postfix, dovecot)? Thanks.
