But subjects change, and subject doesn't provide thread info.  That's why
email clients put a tag in to indicate what message the reply is for.
That's why using a reply with a new subject simply attaches to the
existing thread as it should, because that's what you teld your email
client to do when you told it to make a reply to the existing thread.

A crappy mail client might try to use subjects to join conversations,
but not a proper threading one.
