Single user is the mode in which the system has just root logged in at
the console with nothing else really running.  Nothing to do with su.

The man page for su says: Change user or become super user.  Perhaps
they think it means switch user or super user.

That would perhaps make sudo be 'super user do' which makes sense to.
Certainly single user does not. :)
