Mailfilter has been reasonably successful at deleting them off the
server for me before fetchmail downloads my mail.

It's been expanded upon quite a bit, but the basics are pretty simple.
If you do decide to use Mailfilter, I've got some example RegExp filters
that have caught a lot of the recent virus-laden stuff, and I let
procmail take care of the rest.
